While Dominik Huber produces two white wines at Terroir al Limit, they are made quite differently. Dominik refers to Pedra de Guix as his 'oxidative' white, while Terra de Cuques is his 'skin contact' white. Guix is a blend of old-vines of: Pedro Ximenez on clay soils, Macabeo on alluvial soils and Garnacha Blanca on schist. After harvesting these varieties by hand they are brought to the cellar and placed in a basket press where they are gently pressed, over the course of several hours, into a fermentation tank. Before the spontaneous fermentation is complete, the wine is transferred into a large Stockinger fuder and several neutral 500L French oak barrels.

Lovely wine with perfectly balanced acid and great texture and depth. The slightly oxidative quality comes through at first along with the distinct Pedro Ximenez character, but then both mellow out with air leaving really pretty wilting white flower and dried stone fruit character.
