' L'Ouverture' is 100% Pinot Noir and Savart's entry level Champagne. 85% of the juice comes from the first pressing which they call the 'cuvee' while the rest comes from the second pressing, also known as the 'first cut'. Maturation occurs in stainless-steel vats on thin lees.
