The Bollinger Special Cuvee is a a blend of 60% Pinot Noir, 25% Chardonnay, 15% Meunier. The entincing wine presentes with a beautiful aromatic complexity consistent of ripe fruit and spices with hints of roasted apples, apple compote and peaches. On the palate, there is a subtle combination of structure, length and vivacity. The bubbles are like velvet and the flavors of pear, brioche and spicy aromas are evident as are notes of fresh walnut.

Congratulations to TB12 on going to his 14th Conference Championship. The nose shows; more macerated green & golden apple, pineapple than usual. Touch of apple cider, bruised pear, some dried apricots, nougat, melted, salted caramel, alluvial limestone minerals, chalk, sea spray, roasted white spice, dry yeast, rising bread dough, baguette crust, ginger ale with withering lilies and some spring flowers. The palate has softer mousse & less lively acidity than previous bottles. Still nice but, it’s giving cause to wonder when this bottle was disgorged. Macerated green & golden apple, yellow peach, pineapple juice. Touch of apple cider, bruised pear, some dried apricots, nougat, melted, salted caramel, alluvial limestone minerals, grey volcanics, gritty chalkiness, sea fossils, saline, roasted white spice, nuts, dry yeast, rising bread dough, baguette crust, ginger ale that has the high notes of root beer, vanillin with withering lilies and some spring flowers. The acidity is ok but, seems off a bit. Change in base wine for this bottling? The finish still rich, elegant, well balanced persisting minutes. Bottle is off slightly from the many others we’ve enjoyed. Because no reason at all and we need to drink more Champagne. Bolly “special cuvée” offers a pretty great value in non-vintage from big name producers. It has that rich brioche and sea foam salinity that I love and often have to pay way more $$ for to get in Champagne. Super delicious and a great way to start a meal.

Our friends deck coming along nicely. The kitchen bar & lighting is in. Tastes really good tonight. Showing more of the right kind of oxidative notes I enjoy. Golden & green apple, braised pear, overripe pineapple, lemon, lime juice, nougat, some apple cider, vanillin, yeast, bread dough & crust, sea fossils, grey volcanics, limestone, white spice, gentle, powdery chalkiness, micro oxygenation, excellent with spring flowers, yellow flowers & withering white lilies. Excellent acidity. The finish is rush, smartly balanced, elegant and persistent.

Good way to kick-off the 4th on our friends new deck in progress. The Bollinger Brut Special Cuvée is my idea of perfect balance between reductive & oxidative. Always rock solid! Great pair with white cheeses. Previous notes will stand. Happy 4th of July all!

With Covid-19 and the country in extended lockdown, mass economic shutdown & unemployment, one has extra time to enjoy some extra bottles, explore their creative side & dabble in a third career. You can now not only follow my notes but, also my wine inspired landscape design. Here are some of my first creations. Strong beginning huh? I think I have a bright future after this is all over. The nose reveals; lemon chiffon/meringue, lemons, lime zest, green apple, just ripe pineapple, grapefruit, green melon, some slightly bruised golden apple, lychees, cream, vanillin, very light caramel, elegant, soft chalkiness, volcanics, sea fossils/spray, bread dough to baguette with yellow florals, spring flowers & jasmine. The body is rich with beautiful mousse & excellent micro-oxygenation. lemon chiffon/meringue, lemons, lime zest, green apple, just ripe pineapple, grapefruit, green melon, some slightly bruised golden apple, lychees, white peach, cream, cream soda, vanillin, very more caramel, elegant, soft chalkiness, volcanics, sea fossils/spray, medium white spice (ginger)with just a touch of palate heat, bread dough to baguette with yellow florals, spring flowers & jasmine. The lively, delicate acidity is excellent. The rich, well polished & balanced finish delicious & even throughout with nice, delicate, palate penetrating white spice that persists minutes. Something to pair with cupcakes from the Buttery Bakery...Carrot Cake, Rum Custard with Coconut, Red Velvet and Dark Chocolate. Everything the Buttery makes is near perfect. Excellent finish to a great evening! Thanks James & Christina for hosting. Photos of; the House of Bollinger, caves with library bottles we’d all like to get our hands on, one of their barrel coppers and Grand Cru vineyard.
