Opened a bottle 7hrs prior to serving. Still very primary and full of fruit: bright cherry pulp and crème de cassis dominate at the moment. Hints of mocha, caramel, rosehips, cinnamon, earth and roasted bell-pepper give a sneak preview of things to come in the future. Beautiful now, probably even more so in five years time. Indeed, it's a tad better on day 2. More depth and complexity: savoury notes, smoke, tobaccoleaf are a little more prominent. Which is a good thing. Up a notch.
