Sipping Fine Wine
Grapes from small Paso Robles AVAs blocks, aged in 75% new oak for 18 mos. Dark Ruby, aromas of sweet ripe black fruits, smoky tobacco and pepper spices. On the palate flavors of black cherry and blackberry with herb, cacao, espresso and vanilla oak, after it opened up. Fine tannins, long finish ending with fruit, cacao, vanilla and earthy herbs. Good but let this age for a couple of years.

This wine has a deep ruby hue with viscous tearing. Aromas and flavors are highly expressive with notes of Luxardo black cherry, dried blackcurrant, ripe blackberry, juicy plum, violet, molasses, mocha, coconut, vanilla, clove, nutmeg, cardamom, dill, and leather. On the palate, this wine is dry with a hint of residual sugar that has a softening effect. It has medium(+) acidity, a full body, high alcohol (15% ABV!), high tannins that are smooth and velveteen. The finish lingers. It’s a rounded, full-bodied, and opulent expression that epitomizes the wines of Paso Robles.

Nose - terra cotta pot, wet stone, rose petals. Flavors - Plum, cherry and apricot. Super soft tannins and velvet mouth feel with just a bit of acid to balance it out. With just a hint of a dry pleasing finish. Love this wine! My kind of Cab Sav!
