Deliverance Ginger Tonic is a fantastically curious hard cider and cocktail hybrid. This cider is gently fermented with a light white wine yeast, then receives five gallons of fresh squeezed ginger juice per batch. The tonic comes from my own hand-made tonic water. I hand-zest thousands of limes and then juice them, hand-chop hundreds of fresh lemongrass stalks, then add a tea made from soaking the bark of the Peruvian cinchona tree. When simmered in water, this natural product releases the anti-malarial chemical quinine, which makes this a tonic. There is no other cider quite like this one - hazy, off-dry, with complex flavors of citrus and ginger.
