After five years on the lees, this Extra Brut... offers a very clear and attractively aromatic, but also pure, complex and refreshing mineral bouquet; it shows aromas of lemon and pineapples mixed with chalky and iodine flavors. Full-bodied and dry on the palate, this is a serious, expressive and tension-filled Champagne with a coolish and refreshing character. It has lots of grip in the stimulatingly mineral finish. Finish has this lovely refined richness as this opens. Terrific. As this open more almost like this fine non obnoxious sherry like finish. Spectacular.

Has that biscuit and stone fruit nose i enjoy so much, and the razor sharp acidity flavor of a low dosage bottle most of my friends enjoy. The mousse is not as fine as I'd like, but still great. Id say this goes great with oyster or other briny seafood. The nose makes me think it would love some popcorn also :-)
