Night 2 notes: Just a killer Chablis. The purity and crystalline nose has citrus drizzled barely ripe peach, unbelievably sweet limestone/chalky minerality, a wee bit of damp earth. Intensely flavored yet almost weightless. Pure, very nicely integrate acidity. Great balance and nice persistence.

One can tell there’s a bit more going on here than a typical Chablis while remaining true to its origin. Well fruited with citrus and flint...but there’s some “je ne sais quoi” about this that kept me intrigued. Some added cellar time was probably in order.
