While I appreciate the smart Japanese pull tab closure, I didn't care for this sake. Pours a medium minus milky white The nose shows a lot of spring blossom, apple pip, bitter almond character. The palate entry is med + sweet, med - acid and med alc. Bubble texture is fine, it feels like th rice solids give multiple nucleation points and soften the mouth feel. Finish is bitter sweet. Ethyl caproate throwing balance off? Note 'DOB' is listed as 3/21 so maybe this should have been drunk younger or didn't see ideal storage?

It is interesting to try a sparkling sake by Dasai. I have to say the first impression it taste like a effervescent aspirin at first but the fresh rice notes saves it. Cloudiness reminds me of a fresh coconut toddy. If you haven’t tried it strawberries and sake goes amazingly is well.
