A lovely example of the chalky intensity and true limestone terroir of Chitry’s kissing cousin, Chablis. Winemaker Olivier Morin’s vines are found in the southwest corner of Chablis, near the village of Courgis. Here fine clay mix with alabaster-white limestone that’s delightfully rich in fossils, the “sea snail” shapes so common in the best Chablis vineyards. Overflowing with citrus notes and crushed stones, this picture-perfect Chablis demands a summer afternoon, a generous plate of charcuterie and a healthy wedge of Comte.
