MAGNUM. The orange-pink color of this “eye of the partridge” Pinot Noir-based wine historically was the hue of most Champagne made in Bouzy in the nineteenth century. (The wine’s singular hue is like the color of a partridge’s eye.) Pinot Noir grapes are macerated briefly to extract color then pressed. Pink roses, lavender, wild strawberry and pomegranate.

Popped and poured from a half bottle; enjoyed over the course of an hour. The “Oeil de Perdrix” is made in the saignée method and pours a pale copper/pink color with a persistent mousse. On the nose, the wine is developing with notes of strawberry, raspberry, pink pepper, lemon, and chalky minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is medium+. A lovely expression of a Blanc de Noir Rosé from Bouzy. Disgorged April of 2023.

Introduction Champange from our friend Christina. Lighter & leaner style of Rosé from what we normally drink. Soft mousse & micro oxidation. Strawberries light orange citrus, cherries, blackberry reduction, watermelon right on the rind, edgy, grainy chalkiness, grey volcanics. spot of saline/sea spray, baguette crust, pink rose pedals & flowers. The acidity is soft & splendid. Excellent finish that is well balanced, has nice tension, smartly polished & persists nicely for minutes.

The Pinot Noir grapes spent a brief time on skins. The tension of the acid and the gentle skin contact help create a compelling wine. Gentle rose, clementines, yogurt, and a touch of mint in the nose. Peach, dates, and orange zest on the palate. This husband and wife team have a tiny walled vineyard in Bouzy. This is refined and not a powerful Bouzy bubbly. I’ll be sad if I get priced out of their wine.
