Light golden color, fine bubbles. White flowers and light toast; red apples, small red berries, light pepper. Hand-harvested. Gently pressed and then fermented on selected yeasts in temperature-controlled, stainless steel tanks. Secondary fermentation in bottle (metodo classico); aged for three years in bottle. Dosage less than 6 g/L.
