The Coeur is the heart, orandnbsp;the very core ofandnbsp;the pressed juiceandnbsp;where it is said that theandnbsp;finest juice lies andndash; of that, Champs selects only 800L, so one can understand the production size.andnbsp; Coeur deandnbsp;Cuvandeacute;eandnbsp;is alwaysandnbsp;a single-vineyard wine, the grapes coming from a 55-year-old vineyard named Blanchesandnbsp;Voies. The final blend comes to about 80% Chardonnay and 20% Pinot Noir.andnbsp;All wines of the house are vinified in oak, thisandnbsp;cuvandeacute;eandnbsp;in oldandnbsp;barrique. As one would expect given the lineage of this wine as well as the vintage, it is firm in its youth but with air reveals a fleshy, profound wine with citrus and light red fruits, the oak allowing a soft texture to round the mouthfeel out.andnbsp;

Wine Nerd Herd gathering at my home in San Antonio TX was started with a early arrival celebration of Champagnes. We started with this bottle and it showed well. Very reminiscent of Krug Grand Cuvée. Smokey nose, slightly larger bubbles than expected yet robust and clean on the palate. Don’t miss this bottle.

Paired with a cornucopia of fresh oyster-Sex on the Bay, Blue Points and Beausoleil. 80% Chardonnay and 20% Pinot Noir disgorged on Jun 2015. Nose of the Krug Grand Cuvée, the oak gives it a sassy side. Slightly creamy texture, lemon curd and honeysuckle fill the mouth. Finish is over 30 sec. A can’t miss Champagne!
