Jean-Baptisteandnbsp;Geoffroy started making a vintage-dated champagne in 1995, and there has been very little formulaic approach to the wine, aside from making it a selection of the top wines produced from hisandnbsp;Cumiandegrave;resandnbsp;vines. The wines are always fermented in oak, usuallyandnbsp;barriqueandnbsp;or demi-muids. The 2005 is a blend of 53% Chardonnay, 30% Pinot Noir and 17% Pinot Meunier, aged under cork for the secondary fermentation. This is undoubtedly one of the finest of all 2005 Champagnes, as so many were too savory and vegetal, butandnbsp;Cumiandegrave;resandnbsp;seems to have made out very well, as they were the earliest-harvested village that and most years. The wine is just beginning to show the second life of hints of honeyed flavors, but still both citrus and red fruits remain.andnbsp;andnbsp;
