The name is in homage to Dominique Moreau's grandmother, but perhaps also an introduction to the subtle excellence and humble nature of Dominique herself. She started bottling her own wines in 2006 in the Aube, a region very little considered worthwhile at the time. Efflorescence was one of her original wines, made inandnbsp;barrique, juxtaposed to Resonance which was aged in enamel-lined steel. Efflorescence is a non-dose Extra Brut made of 100% Pinot Noir which finishes its fermentation in barrel before spending 9-10 months in the same barrel. 2012 vintage gave this wine incredible focus, bright acidity to go with the supple texture, with flavors of orchard fruit and white flowers, mixed with white pepper spice characteristic of the Aube andldquo;soilsandrdquo;.andnbsp;
