Joseph Dorbon Vieilles Vignes Arbois Chardonnay 2011
This is 100% Chardonnay aged in barrel for several years in the traditional Jura andldquo;sous-voileandrdquo; style, under a veil of yeast that forms naturally on top of the wine. This process lends wines a nutty, oxidative side (andagrave; la Fino Sherry) but the best sous-voile producers in the Jura are able to harness this character in perfect harmony with the wines' other elements. This is a wonderful example, where the umami from the oxidative notes dovetails perfectly with the wine's citrus fruits and pronounced minerality.andnbsp;
