Jeremy Arnaud is a young producer in Chablis whose domaine was founded only a few years ago but already shows great promise. Working with less than 1 hectare of vines, Jeremy is crafting beautiful Chablis employing organic farming practices and natural wine making.andnbsp; Vau de Vey is a unique 1er Cru sporting one of the steepest slopes in Chablis facing south east.andnbsp; Jeremy holds a small parcel of 40-year-old vines in the area planted in Kimmeridgian soil. The nose of his 2018 Vau de Vey shows white flowers and tart citrus fruit with a lovely spicey cut. The palate reflects the warmth of the season and is quite round lifted by crystalline acidity and focus. Fermented with native yeast in steel and aged half in steel and half barrel with 10% new wood.
