I Custodi is a project founded by Mario Paoluzi in 2007 that is deeply committed to not only the revival of winemaking on Mount Etna but the preservation of traditional farming techniques and practices. The vineyard work is done in teams, each paring an older Contadino and a young student, ensuring that the complicated art of farming vines planted in free-standing albarello is not lost. Pistus is his juicy, vibrant red made from the younger vines on the estate. On the nose vibrant red cherry fruit shows over delicate notes of lavender and winter mint. The wine is light on the palate with lovely minerality and very light tannins. It's refreshing but still has tension and enough focus to stand up to richer foods like duck or roasted pork.
