The Boulay family have been making wine in Sancerre since the 14th century and their wines are as classic as they come. This is their entry level bottling from vines around the village of Chavignol. The Kimmeredgian soils in the area make for a racy, mineral expression of Sauvignon Blanc that shares the brightness and finesse of the best of Chablis. Pair with oysters, lightly prepared fish and any kind of goat cheese.
