Fascinating wine. So much going on. Super vinous, even cidery. Gold in the glass, a little oxidative, looong finish. Some subtle green flavors, a leafy wild herbal thing. Deep, tooth tingling acid, but mature, white balsamic-type acid. Yeasty but long-fermented sourdough type yeasty. Madeleines and lemon marmelade. Enjoy this with rich food, like roast game bird. Or Cheetos. We paired it with Cheetos. Deg sept 2019.

A distinctive pale old gold in the glass. A plethora of fine, elegant bubbles that just go on and on and on. Very effervescent and creamy with a soft mousse. Crème brûlée and roasted almonds get the party started on the bouquet with more pretty white flowers and soft cherries complimenting. All Pinot Noir disgorged on April 2020, this is still quite youthful and fresh with that zippy acidity you come to expect. This is Savart’s entry level offering but it’s head and shoulders above so many others. Very sensual and elegant throughout with those classic Pinot characteristics shining through. Not the most complex of champagnes at this level but definitely makes up for it with nice depth and purity of fruit. Sexy in the mouth, the palate is beautiful and expansive. Firm in structure. Stone minerality alongside Pinot fruit. Dried cherries and nectarines with clay, mushrooms, and just a touch of raspberry on the palate. Long and refreshing finish. Truly excellent champagne from a real deal superstar.
