A lithe, sleek and utterly classic Chablis from a producer we've become very fond of. Olivier and Francine Savary originally started as growers in the early 80's, selling most of their grapes to negociants in the region. After a few years of farming, they began producing their own wines, and in the early 90's were introduced to Kermit Lynch by their good friend Jean-Marie Raveneau. This particular wine comes from 35+ year old vines and is aged partially in stainless and partially in older, neutral oak. While the '15 vintage gives this wine a bit of extra creaminess in the midpalate, it's still supremely elegant and irresistibly mineral-driven.andnbsp;
