Domaine Moreau-Naudet has been a keystone Chablis producer here at Manhattan Wine Company in recent years. The wines are exactly what we look for when a Chablis craving sets in; zesty, mineral, and refreshing with layers of flavor and complexity to spare. Like so many properties we follow, the farming here is organic and the wine making tends to be straight forward relying on native yeasts a patient elevage in barrel. Their Forets cuvandeacute;e is drawn from two parcels, one located next to Raveneauand#39;s holdings in Forets and the other adjacent to Vincent Dauvissatand#39;s with vines between 25 and 60 years old. A larger portion of Moreau-Naudetand#39;s 1er cru wines are aged in barrel than in the village wines, withandnbsp;elevage lasting up to 18 months before bottling.
