So good! Night one was a bit restrained, tempting me to wonder, why not champagne? Night two was fireworks... nose of fresh cut grass, warm buttered biscuits, sweet cream, bee pollen, bunches of fresh green herbs. Then, a progression of minerals and flowers on the palate, chalky at first then building to a climax of granite and buttercups and, unbelievably, blueberry. Beautiful balance.

Guava, mango, pear, fruit cocktail, dried apricot, quince, musky, honeyed, fruit leather upon opening. Bright, complex, delicate mousse with a juicy line of acidity that runs through it. Light, refined, feminine, fresh. Green grapes, crisp, quince/quince paste, stone fruits. Slight aldehydic notes mixed with gooseberries/green apple tartness, golden plums and mineral. Mouthwatering, intriguing, unique.
