Pale light gold color. Tight nose at first but opens up with air. Rich in the mouth with steady acidity and great mouth feel. Gives a nice impactful finish. A better sample of this than many previous bottles I’ve tried. Really good tonight.

Medium gold with vibrant bubbles. A bit more of a subdued nose than the 02 Taittinger CDC next to it. Notes of lemon, apricot, white stones and some tan spice. Has a bit more of a complexity to it. Rich and glycerol in the mouth. Has some lovely but subtle power in the finish. Not the best of the bottles of this I’ve had. But still a nice treat.

Soft brioche, settled citrus, hints of shells and a salinity. Secondary notes coming through- honeysuckle, biscuit. Delicate and sophisticated- perfectly in place.

The 1996 Dom Perignon is a revelation at now twenty three years of age. On the nose this takes on some spectacular range from Challah bread tones to lemon zest as well as Pink Lady apple and candied ginger. Once on the attack this shows formidable weight and tension, while this seamless wine effortlessly dances across the mid-palate. Ripe Japanese pear, brioche, lemon zest and wild mushroom flavors collide with the strong salinity and minerality. A true heavyhitter, this wine has many rounds left to fight, but is simply intoxicating at this stage in its development. Drink 2019-2040- 98

Apples, pears, lime zest on buttered, lightly toasted croissant and never ending bubbles. Amazingly long finish. Did I mention the buttery mouthfeel? Wow!

Here we go... let the games begin! Brilliant showing. Nose is soft, but offers up notes of bread, yeast and a hint of petrol. Beautiful poise on the palette with biscuits, almonds and brioche, with apricots and peach coming along for the ride. Absolutely sublime!
