The fruit for this wine comes from Hemel en Aarde, Elgin and a splash from Stellenbosch. Elgin is an appellation nestled among the mountains about 40 miles southeast of Cape Town. Elgin is one of the cooler, higher elevation vineyard sites in the area and contributes to the bright, expressive fruit profile of this wine. Considered part of Walker Bay, Hemel en Aarde (andldquo;heaven on earthandrdquo;) has quickly gotten a reputation as an ideal place to grow Burgundian varietals Chardonnay andamp; Pinot Noir. The proximity to the ocean moderates the temperature nicely. The wine is aged in French oak (10% new) for 9 months before being bottled unfined/unfiltered.
