Fantastic champagne. Very subtle mousse. Dark yellow color. Decanted and drank from bordeaux glasses. Inpressive nose with a lot of green apples. These apples come back in the taste. The high sour is surprisingly kickin!! Paired perfectly with chopped marinated raw tuna. Also the prawns from the saltstone were a perfect match. All guests agreed: This is great stuff!
