Experiments in bottle aging sherry... This has a beautiful deep amber hue. Quite saline nose, oceanic really, and the smell of tanned leather, dried apricots, seaweed, lightly roasted coffee beans and hazelnuts. Nose is a touch alcohol but mellows. Palate is also salty and mineral with dried fruit and walnuts and an emergent sweetness. More pronounced bitter finish than I remember at release (2016), but acids have calmed. These barbadillos really need food, and are great values- hard to get more concentrated elegance for the money.

Extraordinary wood/saline accord. The nose on this takes one back to the bodega, where we were privileged to taste this in September 2019. The stacks of slumbering casks, the air thick with humidity and yeast, the walls black with fungal growth. There really is nothing like it in the world of wine. Fabulous with cheese and nuts, also great with a roast.
