This was opened and we enjoyed a few glasses before recorking and reapproaching 24 hours later, at which point it was really singing. Yellow peach, pear and medley of orchard fruit, layered with pressed yellow flowers, dried persimmon, and notes of vanilla and bourbon. So delicate. Such fine bubbles. Saltwater taffy and some caramel and rock salt on the palate. Subtle tannic echo. Mesmerizing.

The 2008 Dom Pérignon is a huge, powerful Champagne and also clearly one of the wines of the vintage. This is one of the most reticent bottles I have tasted. So much so that I am thinking about holding off opening any more bottles! The 2008 has always offered a striking interplay of fruit and structure. Today, the richness of the fruit is especially evident. Readers who own the 2008 should be thrilled, but patience is a must. (Antonio Galloni, Vinous, August 2021)

A wine of tremendous energy. Much like other Champagnes of this vintage, the acid plays a starring role which, to some palates, may be a bit much at this early stage in its evolution. However, with some air, it relaxes a bit and begins to show off its character…and this is a wine of tremendous character. Lemons, minerals and smoke dominate now but it’s the sheer depth that pulls you in and won’t let you go. My first experience with the 2008 and I have to say that it met my lofty expectations. This is a legend in the making.

Citrus; finger lime, smoky minerals. Bright, a little bitter and with an interesting saline quality. On the palate this is weightless, flush with beautiful acid, and a texture that is subtle. Hint of marzipan. Not quite the aromatic complexity I was expecting, but maybe that will come with age.
