A family domaine for five generations now, Lilian is the latest vigneron of an estate created in 1895, taking over for his father Gerard in 1999. After going to school and internships in the region, Lilian has turned the domaine into one of the very few organic estates in Chablis. The vinification is done in stainless steel, then most of the Premier Crus spend about 6 months in older barriques for elevage. That includes the Montmains, from two parcels with clay over the limestone; this Premier Cru is a powerful wine that’s one of the most age worthy of the Duplessis domaine. For those who have it, some patience is required for the Montmains to open and show its full spectrum of class and provenance - on entry it is quite fine and tight, opening up more on the back palate. There is so much more going on in this wine, that will be rewarded with time in bottle.
