The 2016 Pecorino is wonderfully fresh but also a bit withdrawn. Gingery spice, ripe yellow apples, hints of candied citrus and an enriching note of almond paste creates an alluring display. This is silky in texture, contrasted by nervous acidity which makes for a juicy experience, as ripe orchard fruits taper off to salty, savory mineral tones. Medium gold in color, waxy, almost oxidative nose… explosive round soft medium-weight notes of ripe grape, juicy ripe pear dripping with sweet honeyed richness. Intense, demanding, lip-smacking attack and a long, lingering finish. Impressive with fried zucchini, swordfish, and bucatini.

Started off with a very strong nose of apple cider and not much taste. After an hour and change, had a lovely nose of baked apple and spices, and tasted sweeter. Reminded me of a Joly Savennieres

Fairly shy but also some weird mix of sometimes reductive sometimes oxidative. A lot of tension and texture. Got better on the 2nd day but missing the explosive fruit I remember from 4 or 5 years ago. Finally opened up and was great on day 3.
