Firm reduction which doesn’t blow off in a decanter, plenty of saline, briny, cool minerality, savory fruits, citrus and olives. Lots of texture and weight but also very light. Another wonderful expression of what “natural” wine is capable of being.

The slightest bit of reduction that quickly blew off to reveal a beautiful nose of florals, peach and honey. On the palate it makes its presence known but tiptoeing not stomping. Wonderful concentration that reveals layers of fruit and herbs. At this stage I would call it a precocious child.

A very fine petillance giving a somewhat cloudy appearance. Quite youthful for a 7 year old white. Nutty and Lemon aromas and flavours with a cleansing acidity which will carry it forward. A favourite of Michaela our sommelier. I now have a new found admiration for Trebbiano, a variety used in Australia in the past to make bulk uninteresting Wine. This is refined and complex continuing to show different nuances with air. One of the 1001 Wines and one can see why.
