If you want to truly understand the influence Mount Etna has on the white wines of this part of Sicily, there's no better teacher than Benanti's Pietra Marina Etna Bianco Superiore. It's all about the minerality, baby. The 2011 vintage has subtle honeydew melon and lemon on the nose, but it's the unmistakable notes of flint and black ash that speak loudly from the glass. On the palate you'll find a complex melange of white peaches, lemons, hints of almonds and that intense Etna minerality. This is one savory wine. Pair with meaty fish dishes, like monkfish, tuna & swordfish.
