Nervy and tense. Lime and saline minerality. Other worldly juice.

Everything about this champagne is distinct and dare I say it, special. Really pretty in the glass with an initial burst of fine bubbles. Green apples show on the nose upfront but soon transforms into a pretty unique combination of oak, smoke, and ginger. Stone fruits and roasted nuts. A faint hint of really nice red fruit with more time in the glass. Really unique and fun. Biodynamic and truly natural champagne. Single year, single plot, single varietal. 100% Aube Pinot Noir and no dosage so the terroir of the Les Cognaux plot speaks clearly here. Zippy acidity and oh so refreshing. The balance is perfect, absolutely spot on. Disgorged in October of 2019 from the 2017 vintage. So energetic and lively. There’s an initial burst of orchard fruit on the tongue which the racy acidity balances nicely. Toasted bread and herbs along with spice and minerality. Chalk and raspberries. Impressive length. One of the most unorthodox champagnes I’ve had and I am definitely here for it.

Perfect for seafood. A bit dry on its own but still delicious.

Started off with lime zest and a chalky finish. Day two, algae & green tomatoes. At this point, I think the fosse-grely is the best of the bunch.
