Jalapeño Beer Cheese Dip

Beer cheese is the ultimate game-day dish, and we kick it up a notch with the addition of roasted jalapeños. Use as many or as few as you like, depending on how much spice you like. This dip is perfect served with tortilla chips, crackers, or fresh vegetables, and it makes for a tasty addition to your tailgate burgers.

INGREDIENTS
4 jalapeño peppers, halved and seeded
1 (8 oz) package Neufchâtel cheese
2 cups shredded Monterrey Jack cheese
½ tsp garlic granules
1 tablespoon corn starch
1 cup beer

METHOD
Preheat the broiler. Place peppers, skin-side up, on a baking sheet and broil until charred and soft, about 12 minutes.

Preheat the oven to 350°F. Place peppers in the bowl of a food processor and add Neufchâtel, Monterrey Jack, garlic granules, corn starch and beer. Blend until smooth.

Transfer the beer cheese to a baking dish. Bake until bubbly and beginning to brown on top, about 20 minutes.
