"Everything Bagel" Nut and Seed Mix

Covered in sesame and poppy seeds and savory with dried onions and garlic, this roasted nut mixture is tasty eaten out of hand, or finely chop it to use as a topping for salads or on snacks like buttered toast. This mix makes a great gift from the kitchen.

Ingredients
3 cups raw, unsalted nuts (such as a mix of pecans, cashews, walnuts and almonds)
6 tablespoons sesame seeds
1/4 cup dried onion flakes
1/4 cup grated parmesan cheese
3 tablespoons poppy seeds
2 teaspoons garlic powder
1 teaspoon light brown sugar
3/4 teaspoon fine sea salt
1 egg white

Method
Preheat the oven to 325°F. In a large bowl, toss together nuts, sesame seeds, onion flakes, cheese, poppy seeds, garlic powder, sugar and salt. In a second large bowl, whisk egg white until very frothy. Add nut mixture and toss to thoroughly combine. Transfer to a large, rimmed baking sheet and bake, scraping mixture up and tossing every 10 minutes or so, until toasted and fragrant, about 30 minutes. (Watch closely toward the end to ensure that the onion flakes don’t burn.) Set aside to let cool completely before serving. Store the mix in an air-tight container for up to one week.
