This is a tasty Cabernet Sauvignon blend from California. Big and bold with medium acidity. Full bodied and smooth with nice complexity. Dry on the palate and very fruity. Showing black fruits with cedar, vanilla, leather, spices, earth, chocolates, tobacco, coffee and black pepper. Still young and needs a few years to calm down. Good right out of the bottle, and better after 2 hours of airtime. I had the 2019 before, and it is very consistent. A blend of 78% Cabernet Sauvignon and 22% Shiraz. 14.5% alcohol by volume. 91 points. $50.

Deep Ruby with aromas of ripe berry fruits, spice and herbs. On the palate flavors of ripe cherry and blackberry with notes of cinnamon and cacao. Medium+ finish, fine tannins, lively acidity ending with fruit, cedar and herb character. Very nice!

For our Thanksgiving Dinner yesterday one of the wines we had the pleasure of opening was the 2018 Penfolds Bin 600 Cabernet Shiraz. A California wine 20 years in the making. Cabernet Sauvignon from all around Sonoma and Shiraz from the Camatta Hills Vinyard in the Paso Robles area. A blend of 78% Cabernet Sauvignon and 22% Shiraz. On the nose there is black cherry, blackberry, black currant, spice, chocolate, herbal notes, eucalyptus, leather and earth. On the palate is black cherry, blackberry, spice, clove, licorice, black pepper, savory smokey meat and earth. This wine is medium to full bodied with medium+ acidity and medium+ fine tannins that gives a ling black fruit earthy finish. As yesterday was a day to give thanks for which I am sure we were all thankful for many reasons, family, friends, life and so much more. A pleasant somewhat underwhelming nose. Vanilla and charred cedar on the palate, greenery, and spices. An inkling of residual sugar on the palate, but syncs nicely with the medium acid and medium tannins. Quite solid. 92+ points

Rich crimson with purple tinges. It certainly has the Penfolds winemaking thumbprint of ripe fruit and toasty oak. As HH said it tastes more Australian than Californian even though all the fruit is Californian and it was vinified there. These are the details (78% Cabernet 22% Shiraz. Napa 45%, Sonoma 35%, Paso Robles 20%). In hindsight it probably tastes Australian because of the Cabernet Shiraz blend which is common in Australia and rare (or nonexistent in California?). This venture for Penfolds has been 30 years in the making with Shiraz cuttings being brought from South Australia to Geyser Peak in Sonoma back then as our host for the dinner explained on the night. 4 Cuvées, all Red have been made ranging in price of $95 for this wine to $950 for Quantum. 70% of the production has been allocated to the North American market so dinners such as the one we had are quite rare in Australia because of lack of stock. This Bin 600 even though the least expensive of the 4 Cuvées will live well into the late 2030s even though it is so well balanced you could happily drink it now.

V18. Very nice first attempt! Sharp, strap leather nose. Rich, deep blackberry and black currant fruit. Bright , smooth slightly chalky and mocha finish. Nicely balanced, good food wine.

Took 3 hrs for the Cabernet to show up and was better when it did. Paso Syrah overwhelms at first. Will be good but gotta wait at least 5 years on this one.
