The Caillerets is excellent, remaining pretty classic despite having been touched by the frost. Notes of crème pâtissière, citrus zest, hazelnut and chalky soil tones burst from the glass, introducing a full-bodied, ample wine with lovely gloss and concentration, juicy acids, and a mouthwateringly stony finish. I think one would struggle to find a better time to pop this cork than now - perfect drinking for the 2016. Greeted with a nice lemon cream nose and oily texture, there’s depth in the taste profiles. Nuttiness, butter, and cream are layered with a slight puckering acidity and mineral notes. Perfect with this halibut.
