The 2021 Cabernet Sauvignon Hilltop lifts from the glass with a peppery freshness, mixing hints of sage with chalk dust and blackberries. It's soothingly round and supple with ripe red and black fruits underscored by saline minerals as grippy tannins mount toward the close. This finishes structured with medium length, leaving the palate refreshed while maintaining youthful poise. (Eric Guido, Vinous, July 2024)

Quite tannic and a little closed on opening which obscures the fruit so didn’t drink much the first night, but what a difference a day makes. Opened to great fruit & structure with good long finish

After opening a bottle, and allowing it to air, I spotted my review from October 2023 while sipping and reading other reviews. Holding this one for another year and a half shows that it does indeed improve with age. Not as good on day two tho. If you open it, drink it!
