While weand#39;re not quite ready to put Picoand#39;s bottles in the same league as Raveneau and Dauvissat, we fully believe that he can approach similarly legendary status if he continues to apply his immense talents with the same diligence and originality as he has over the past few vintages. Thomas is in no rush to make his wines in the extremely cold cellar under his parentand#39;s house near the center of Chablis. He believes in an extended elevage which, coupled with the cold cellar conditions, allows a slow settling and stabilization process. He does extremely minimal filtration on the ACandnbsp;Chablis and absolutely no filtration on the Premier Crus, something that is basically unheard of inandnbsp;Chablis. andnbsp;If you are familiar with the fantastic (and now seriously allocated) wines of Alice and Olivier de Moor, you will immediately recognize their influence in his bottles, as they have been long-time friends and mentors. His wines are electric, fine-tuned and joyous and offerandnbsp;Thomasand#39; unique expression and complex idea of what Chablis can be.

Lemon curd, gardenias, sea shells, sourdough. Lively rounded acidity, medium bodied, juicy-oily texture, lime zest, chalky slightly floral finish. High elevation vines, lighter in texture than vintage is known for, great acid tension, excellent lengthy finish. Phenomenal producer.
