Mount Eden Vineyards is one of the most Iconic properties in California, first found in 1945 by Martin Ray high in the mountains above Santa Cruz. Producing wines that are neither austere nor opulent, Mount Eden is a bastion of a classic style that is hard to come by these days. The estate Chardonnay is drawn from 20 acres of dry farmed vineyards planted well above the fog line at around 2000 feet in elevation. The fruit is gently pressed and fermented in first and second use burgundy barrels where it completes malolactic fermentation while aging for 10 months. andnbsp;This wine always rewards further cellar age or a decant before serving.

All of the juice is barrel-fermented in new and one-year-old French Burgundy barrels, where the wine undergoes malolactic fermentation and is aged on the lees for ten months prior to bottling. The Chardonnay is then cellared for two years before being released.
