Domaine Hauvette Cornaline Les Baux-de-Provence Grenache Blend 2012

Domaine Hauvette is a treasured source of soulful Provencal wine that has remained unduly under the radar for many years. Founded by Dominique Hauvette in 1988, the property has been farmed organically for decades and was an early trail blazer in the natural wine movement. All of Dominiques wines display elegance and precision while also capturing the wild character of Provence beautifully. The Cornaline Rouge is one of Dominqiue's most intense cuvandeacute;es. Made from 50% Grenache with 30% Syrah and 20% Cabernet Sauvignon the fruit is 100% destemmed, ferments in oak tank with elevage in Foudre. Sanguine, gamey, with dark red and black fruit, lifted acidity and silky texture. The tannins have softened with age but are still present making this perfect for richer foods like steak or roasted meat. Serve slightly cooler than room temperature.
