Ceritas is the brainchild of John and Phoebe Raytek, a winery intentionally modeled on old-world techniques and styles.andnbsp; They aim to craft wines of subtlety with minimal intervention in the winery and an eye towards allowing each vineyard to express itself in the glass.andnbsp; The Charles Heintz vineyard is planted above the fog line in the Sonoma Coast AVA sporting organically farmed Chardonnay vines that are over 40 years old, some of the oldest in the area.andnbsp; The wine is classically unctuous with a firm backbone of nervy acidity to keep things lively.
