Franciacorta Cuvée Speciale Brut, 12.5%. Fermented for 24 months on the yeasts, degorged in 2014, tasted in October 2014. Pale bit rich color. Elegant nose, with typical scents of bread crust, yeast and confectionery. The perlage was so pleasant, and matched well with the risotto it was served with.
