Palate has zingy pear acidity, bitter citrus, toasted brioche and a long minerally finish. Bubbles have held strong after one day.

Delicious celebratory Champagne for gently coming off of a 21-day cleanse sans alcohol (amongst many other things as well). On the dense, smoked honey side of things with bruised pome fruit filling the mid. Nice acid and persistence of pear flesh and spice on the finish.
