Poof and just like that it’s Christmas season! Night photos much crisper this year with the Phone 12 Max Pro. And, I still have to learn how to use all the tools. Numerous previous notes will stand for tonight.

Ruinart last night, Billecart tonight. Gotta start the night with a 375ml of Rosé Champagne. The nose shows; dreamsicle ice cream bar, blood orange, tangerine, very ripe yellow stone fruits, pink grapefruit w/ a touch of sugar, hints of baked rhubarb, notes of black cherries, lean watermelon & not ripened strawberry reduction. White spice, sea spray & fossils, grey volcanics, darker shade of chalkiness, limestone minerals, bread dough, baguette crust, cream, spring flowers, pink roses w/ orange blooms/lilies. The palate has nicely polished mouthfeel, rich and very good ripeness. A little more mineral and sharp chalkiness than other bottles I’ve had. Great micro-oxygenation. Dreamsicle ice cream bar, blood orange, tangerine, very ripe yellow stone fruits, pink grapefruit w/ a touch of sugar, notes of black cherries, lean watermelon, cooked rhubarb juice, & not ripened strawberry reduction. White spice w/ typical heat, faint white pepper popping up here & there, sea spray & fossils, grey volcanics, darker shade of chalkiness, limestone minerals, bread dough, baguette crust, cream, spring flowers, pink roses w/ orange blooms/lilies. The acidity is fantastic as always. The long, rich, lush finish is a touch gluey , well balanced & knitted, polished and persists endlessly with a long set of spice. Always consistent & delicious. Photos of, House of Billecart, their caves and glorious sunset over one of their Grand Cru vineyards.

Happy Friday! Been having a lot of Blanc Brut lately. Sooo good to get back to one of our favorite N/V Rosé Champagne’s. Numerous, numerous notes stand. Tonight; Blood orange, pink grapefruit covered in an ice cream creamsicle, volcanic, powdery chalkiness, sea fossils, pink roses, excellent acidity and balance, elegance and polish for days. Photos of; amazing sunset shot of one of Billecart’s Grand Cru vineyards, two shots inside the House of Billecart and the grounds of Billecart.

Happy 4th of July everyone. I can’t think of many other N/V Champagnes we’d rather kick-off the long 4th of July weekend. Happy Birthday America & Cheers!

The Seasonal Grand Opening of the D&S Lounge. That’s going to require some BSR to celebrate. As well, going to detail notes of this with my new Riedel Vintage Sommelier flutes, center picture. I’ve been wanting to write notes on this Champange in the new flutes as I wanted to do it one I am very well acquainted. As @Paul T- Huntington Beach & @Severn Goodwin have pointed out the many times I have posted it. The nose is definitely more vibrant. Tangerines lead where they haven’t in my previous notes now using the new flutes. More pink rose petals, blood orange, pink grapefruit, leaner; strawberries, watermelon, warmed, creamed raspberries, apricots & cherries, liqueured marmalade, hints of scorched rhubarb, lemon/lime aid, chalky powder, delicate, grey volcanics, sweet, sea spray, bread dough, baguette crust, touch of brown sugar/molasses light, haunting, dry herbs, limestone and bouquet of; white, red, pink & orange roses. The body is round with some gummy or gluiness. Everything about the mouthfeel is more delicate and softer. The bubbles smaller & more refined. Pink rose petals, blood orange, pink grapefruit, leaner; strawberries, watermelon, warmed, creamed raspberries, apricots & cherries, liqueured marmalade, hints of scorched rhubarb, almost a date presence on the long set, chalky powder, delicate, grey volcanics, sweet, sea spray, lighter intensity of white spices but, still has the heat & palate penetration, bread dough, baguette crust, touch of brown sugar/molasses light, haunting, dry herbs, limestone and bouquet of; white, red, pink & orange roses. The acidity is all fresh & lively with this cuvée. But, even that seems better. The finish is as always; well knitted & balanced, polished, fresh, persistent and never disappoints. Photos of; the best room in our house for 6+ months of the year, our backyard. Aka, the D&S Lounge on Memorial Day Weekend 2020.

Thank goodness they still deliver during the Coronavirus pandemic. This is extra good tonight. I was really very close to Soda Streaming that Wheeler Farms Rosé.

Happy Spring! It’s one of our favorite points in the year. More; daylight, a little warmer in CA and everything starts to bloom which, means a long summer of gardening and being outdoors every day/night is not far off. Since it was such a great day and basically most Californians are shut-Ins, the voluntary self quarantining was getting to me. I did the landscaping and got an afternoon of fresh air today. A breath of fresh air...ahhh! Wow, was it needed after Gavin’s Newsom’s estimate of 25.5 million Californians would be infected with Coronavirus over 8 weeks yesterday. So, a good night to celebrate another day of being virus free with my 2nd favorite N/V Rosé Champagne. All my numerous previous notes apply. Stay safe everyone and remember the new terminology of the new decade...social distancing! Cheers!
