Champagne Taittinger was established in 1931 by Pierre Taittinger on the foundations of Forest-Forneaux, itself established in 1734 and the third-oldest wine producing house of Champagne. A blend of 30 Chardonnay, Pinot Noir and Pinot Meunière vineyards, respectively 40%, 35% & 25% of the total, from several harvests, rich and complex. Pale yellow, vibrant bubbles, Crisp fruit aromas, apples and pears. Palate shows generous mineral and toasty oak notes integrated with the fruit. Absolute a must on your list, a true house staple for me. Great Champagne value.

Kicking off Passover night two with some bubbles. We may not be allowed to eat leavened things, but this sure smells yeasty. A generous backdrop of applesauce, cold pears, and salt. A wonderful Brut NV.

Always a good drink. Crisp acidity, baked apple, and melon. Taittinger is a heavy chardonnay style and it always shows in how clean and sharp the wines are (especially the comtes), but the blended wines in the NV add a nice roundness on the finish.

Although this one is only 40% Chardonnay, Chardonnay dominates the nose with pears, apples, yeast and lemons. There are background hints from red fruit but the white predominates. The finish is very citrusy and acidic: out of balance. For my taste the wine wants more dosage: Brut la Française is too sour for me.

6L! Ben poured this Methuselum at his wedding reception. Champagne always seems to taste better from a large format.

Apple, toast, touch of spice. I could use a little more lees.
