Open for business. Sweet lemon, hints of corn, some salinity. Very expressive on the midpalate with secondary notes coming through towards the end. Biscuits and honey. Great acidity throughout. Years ahead.

So the Fevre Clos bottles were going down quickly and the conversation turned to Champagne. A guest stated her favorite was Cristal and I happened to have a bottle in the ready to drink bin. Light gold with nice mousse when poured that gives a smile-inducing bouquet in the nose. Notes of lemon and sweet citrus, brioche bread, some apricot, some almond and white chalk. Expands in the mouth, coating everything it hits. Hold it in a bit and your face goes flush. Everyone really enjoyed this bottle which is drinking very well now but will certainly evolve and improve with more age.

Pale light yellow gold. Lively constant tiny bubbles. Deep round nose with high pitched fruit. Notes of pear, grapefruit, chalk and limestone. With more air you find some citrus and honeysuckle. Chewy in the mouth with great mouthfeel. Coats the entire mouth. Long finish lingers a minute or more. Velvet. Killer juice. Was inspired to open one of these after seeing a friend’s TN this weekend. Glad I did.

The 2002 Champagne Cristal Brut Millésimé is imbued with soaring notes of pear and smoke, brioche and chalk. Disgorged in 2009, this is a precise wine—it has a sort of crystalline weightless density, with fruit buoyed by a fine mousse, and edgy saline-tinged minerality emerging at the close. 10 grams dosage. "You must be as precise as a Swiss watchmaker, I tell my team," our host, M. Jean-Baptiste Lécaillon, Chef de Caves at Roederer stressed. Precision in spades.
