Brioche, toast. Chalky - balanced fruit. Serious richness and texture.

This bottle is in MOHAI from an old cruise ship. About 1/2 of the bottle has evaporated. I'm not very curious to try it.

Disgorged July 17 2015, which should make the base vintage from 2011. Bruised green apples, citrus, yeasty, baking spices. Creamy and soft with buscuity flavors, orange peel, and sweet baking spices, fine beading, quite fresh!

Congratulations to TB12 on going to his 14th Conference Championship. The nose shows; more macerated green & golden apple, pineapple than usual. Touch of apple cider, bruised pear, some dried apricots, nougat, melted, salted caramel, alluvial limestone minerals, chalk, sea spray, roasted white spice, dry yeast, rising bread dough, baguette crust, ginger ale with withering lilies and some spring flowers. The palate has softer mousse & less lively acidity than previous bottles. Still nice but, it’s giving cause to wonder when this bottle was disgorged. Macerated green & golden apple, yellow peach, pineapple juice. Touch of apple cider, bruised pear, some dried apricots, nougat, melted, salted caramel, alluvial limestone minerals, grey volcanics, gritty chalkiness, sea fossils, saline, roasted white spice, nuts, dry yeast, rising bread dough, baguette crust, ginger ale that has the high notes of root beer, vanillin with withering lilies and some spring flowers. The acidity is ok but, seems off a bit. Change in base wine for this bottling? The finish still rich, elegant, well balanced persisting minutes. Bottle is off slightly from the many others we’ve enjoyed. Photos of; the House of Bollinger, branded cave with resting bottles, their Cooper making barrels and one of their Grand Cru vineyards. 1/17/21

My favourite champagne taste. Smoother than moet, has a almost very slightly tangy taste. In my view better than Veuve, tattingter, and most other champagnes I’ve had.

It’s been a long wait for this program but, today so great! Celebrating Minnesota being Outback Bowl Champions and perhaps a top ten finish. What a great start to my New Year. Somewhere, my father who played for them in the 40’s is smiling. He is resting in glee today. This calls for Champagne! Bollinger tastes just a little better today. 9.3 on the Bollinger, perfect 10 on the game.

A treat from Saison Group Wine Dir. Mark Bright. 1980’s release. Delicious, still fresh and with some bubbles present. A perfectly evolved aged champagne. Pristine condition as the bottles never left the Bollinger cellars until last week.
