Pale lemon color, big fine bubbles. Medium+ aromas of ripe lemon peel, yellow apple, white peach, blossom, vanilla, bread cover, brioche. High acidity, medium body, medium+ intense of flavor, white peach, yellow apple, brioche. Long finish. Balanced, elegant yet structured. Better after some time, beautifully develop in the glass.

Ayala (Bollinger owned), a blend of 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier. Bright Pale Gold with aromas of stone fruits, citrus scents and biscuit notes. On the palate apple and orange, with raspberry characteristics are present in a well balanced structure. The finish has plenty of toasty nutty biscuit, clean and elegant on the long ending.

Second time tasting this recently and I’m still impressed. Undeniably Grande Marque at first sight and smell. Light gold with impressive perlage. Apples, toffee, and plenty of orange zest aromas. Full bodied and quite zippy. 45/35/20 CH/PN/PM and disgorged in October of 2019. Owned by Bollinger and very stylish. This is a very comfortable, pleasant vibe going on here. Biscuits, citrus, and limestone on the palate. Vinous and we’ll balanced, it’s leagues beyond a lot of other entry level champagnes in the same price range. Really fun stuff.

Pale old gold with a fine mousse. Small precise perpetual bubbles throughout. Nice effervescence. A decidedly fresh and aromatic nose showing lemon meringue pie, pears, and orange zest. Yeast everywhere but never obnoxious or superfluous. Green apples and honey say hello. This is one of the most conventional non vintage brut champagnes around. And that is in no way an insult. Few can do it with such clarity, precision, and downright cleanliness. This is a ridiculously clean champagne, it’s so beautiful. Showing plenty of complexity and freshness. The palate displays the customary characteristics of roasted almonds and toasted biscuits. Nice minerality to go with the fresh citrus fruits. Those tart apples are really highlighted here. You want conventional, you got conventional. But in the best way possible.
