Our favorite Spring day is when we get plant the yard. Especially, during Covid-19 lockdown. Never more enjoyable. Flowers by Sofia. Garden is me. A great weather day and worthwhile doing a cheers with of one of our favorite N/V Rosé Champagne’s. With the lockdown, I am running dangerously low on Rosé Champange. I might have to Soda Stream some Rosé wine soon. All my many, many notes still apply. Cheers all and Happy Easter if you celebrate it.

Onto something we love after the Kongsgaard palate burn. Never disappoints, consistent, rich, ripe deep red fruits with just the right amount of minerality & chalkiness. Its Friday & this just had to be worked in. 375ml. Need some acid to marry up to our vinaigrette dressed salad. The first sip threw a lot more raspberries than normal. Beautiful rich fruits of; blackberries, black cherries, summertime watermelon, well extracted pomegranate, mixed berry cola, cherry kirsch, saline, sea fossils, bread dough to baguette crust, great grey volcanics, excellent, grainy chalkiness with pink flowers framed in red & pink rose petals. Four day weekend. Gotta get it off to a good start. Been awhile since we had our 375ml of Ruinart. The nose shows, ripe, slightly candied; black cherries, strawberries, kirsch cherries, rich, summertime watermelon, touch of orange citrus family blend, pomegranate juice, hints of fruit roll up & haunting apricots. Sea fossils & spray, a little bread dough, grey volcanics, chalky powder, orange, spring flowers with fresh & withering, red & pink rose pedals. The palate is full & touch gummy/candied. Fruits are well extracted, deep, ruby; black cherries, blackberries, strawberries, kirsch cherries, rich, summertime watermelon, touch of orange citrus family blend, pomegranate juice, hints of fruit roll up & haunting apricots. Ghostly, not quite fruit brandy or fruit liqueur character, sea fossils & spray, a little bread dough, not quite medium, white spice with hints of palate heat, grainy, grey volcanics, chalky powder, orange, spring flowers with fresh & withering, red & pink rose pedals. The acidity lively and crisp. The round, well balanced & polish finish is always consistently satisfying and lingers for minutes. @Plate & Bottle Dinner Dessert Course, Warm Berry Cobbler, House Made Vanilla, Lemon Verbena Ice Cream. Amazing dessert. Pairing the cobbler with the Ruinart Rosé and the Charles Heidsieck Brut Reserve as well. Both good/appropriate for the dual aspects of the cobbler. Dessert has blackberries and raspberries with lemon and crumble on top (tiny bit of cinnamon) and vanilla lemon verbena ice cream. There are flavors here that call for Rosé & Blanc de Blanc Champange. Photos of, the dinner & our friends Jeff & Hedy beautiful backyard.
